Ingredients
For the Chicken:
- 2 large boneless, skinless chicken breasts
- ½ cup grated Parmesan cheese
- ½ cup breadcrumbs
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 large egg
- 2 tablespoons milk
- 2 tablespoons olive oil
Instructions
1️⃣ Preheat the oven: Set your oven to 400°F (200°C).
2️⃣ Prepare the chicken: Slice the chicken breasts in half lengthwise to create four thinner cutlets.
3️⃣ Mix the coating: In a shallow dish, combine the Parmesan cheese, breadcrumbs, garlic powder, onion powder, salt, black pepper, and Italian seasoning.
4️⃣ Prepare the egg mixture: In a separate bowl, whisk together the egg and milk.
5️⃣ Coat the chicken: Dip each chicken cutlet into the egg mixture, ensuring it’s well coated. Then, dredge it in the Parmesan breadcrumb mixture, pressing gently to adhere.
6️⃣ Sear the chicken: Heat olive oil in a large oven-safe skillet over medium heat. Sear the chicken for 2-3 minutes per side until golden brown.
7️⃣ Bake to perfection: Transfer the skillet to the preheated oven and bake for 10-12 minutes until the chicken is cooked through (internal temperature should reach 165°F / 75°C).
8️⃣ Rest and serve: Remove the chicken from the oven and let it rest for a few minutes before serving. Enjoy!
Notes
- Extra Crunchy Coating: Use panko breadcrumbs instead of regular breadcrumbs for a crispier texture.
- No Oven? If you don’t want to bake, cook the chicken entirely in the skillet over medium-low heat until fully cooked.
- Serving Ideas: Pair it with creamy mashed potatoes, a fresh salad, or even pasta with a light lemon butter sauce.
