Description
Hillbilly Pie is a simple, old-fashioned dessert with a rich, custard-like filling and a sweet graham cracker crust. It’s a perfect treat for cozy family gatherings or potlucks. The buttery, caramelized flavor of brown sugar pairs beautifully with vanilla and a hint of cinnamon for warmth. Serve it as-is or with a dollop of whipped cream!
Ingredients
For the crust:
- 1 ½ cups graham cracker crumbs
- ⅓ cup melted butter
- ¼ cup granulated sugar
For the filling:
- 1 cup brown sugar
- ¼ cup all-purpose flour
- 1 cup whole milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons melted butter
- ½ teaspoon ground cinnamon (optional)
Instructions
1️⃣ Preheat the oven: Set your oven to 350°F (175°C).
2️⃣ Prepare the crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Press the mixture evenly into the bottom of a 9-inch pie dish to form a firm crust.
3️⃣ Make the filling: In a separate bowl, whisk together the brown sugar and flour. Add in the milk, eggs, vanilla extract, and melted butter, stirring until smooth and fully combined.
4️⃣ Assemble the pie: Pour the filling over the prepared crust, making sure it spreads evenly. If using, sprinkle a light dusting of cinnamon on top for extra flavor.
5️⃣ Bake: Place the pie in the preheated oven and bake for 40-45 minutes, or until the filling is set and lightly golden. The center should be firm but slightly jiggly.
6️⃣ Cool and serve: Allow the pie to cool completely at room temperature before slicing. Serve on its own or with a scoop of vanilla ice cream or whipped cream!
