  • 1 lb steak (such as sirloin or ribeye), cut into bite-sized cubes
  • 4 medium russet potatoes, peeled and cut into cubes
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ¼ cup milk
  • 2 tbsp olive oil
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper (or to taste)
  • ½ tsp paprika
  • ½ tsp dried thyme (optional)
  • 2 green onions, sliced for garnish

Instructions

1️⃣ Sear the steak: Heat olive oil in a skillet over medium-high heat. Add the steak cubes and cook until browned on all sides, about 4-5 minutes. Once browned, transfer the steak to the crockpot.

2️⃣ Cook the onions and garlic: In the same skillet, sauté the diced onion for 2-3 minutes until softened. Add garlic and sauté for another 30 seconds until fragrant. Transfer the onion and garlic to the crockpot.

3️⃣ Add the potatoes and seasonings: Add the cubed potatoes to the crockpot along with salt, pepper, paprika, and dried thyme (if using). Stir to combine.

4️⃣ Prepare the creamy sauce: In a separate bowl, mix together the sour cream, milk, and half of the shredded cheddar cheese. Pour this mixture over the ingredients in the crockpot.

5️⃣ Combine ingredients: Stir everything in the crockpot to ensure the potatoes, steak, and seasonings are well-coated with the creamy sauce.

6️⃣ Cook the dish: Cover the crockpot and cook on low for 4-5 hours, or until the potatoes are tender.

7️⃣ Add cheese and bacon: Once the potatoes are cooked, sprinkle the remaining shredded cheddar cheese (and cooked bacon if desired) over the top. Cover and cook for an additional 10-15 minutes until the cheese is melted.
