  • 1 teaspoon Italian seasoning
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, chopped
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • ½ red onion, sliced
  • Optional garnish: chopped fresh parsley or basil

Instructions

1️⃣ Preheat the oven: Preheat your oven to 400°F (200°C). Lightly grease a large baking sheet or line it with parchment paper for easy cleanup.

2️⃣ Season the chicken: In a large bowl, toss the chicken pieces with 1 tablespoon of olive oil, salt, pepper, garlic powder, onion powder, and Italian seasoning. Make sure the chicken is evenly coated in the seasoning.

3️⃣ Spread the chicken: Arrange the seasoned chicken pieces evenly on one side of the prepared baking sheet.

4️⃣ Prepare the vegetables: In the same bowl, toss the bell peppers, zucchini, broccoli, cherry tomatoes, and red onion with the remaining 1 tablespoon of olive oil. Add a pinch of salt and pepper, and stir to coat the vegetables.

5️⃣ Spread the vegetables: On the other side of the baking sheet, spread out the seasoned vegetables in a single layer.
