For the salad:

  • 1 pound lean ground beef
  • 1 packet taco seasoning mix (or 2 tablespoons homemade taco seasoning)
  • 1 head romaine or iceberg lettuce, chopped into bite-sized pieces
  • 1 cup cherry tomatoes, halved
  • 1 cup canned pinto or black beans, drained and rinsed
  • 1 cup canned corn, drained
  • 1 cup shredded cheddar cheese
  • 1/2 cup sliced black olives
  • 1/4 cup diced red onion
  • 2 cups Nacho Cheese Doritos, slightly crushed

For the dressing:

  • 1 cup Catalina dressing (store-bought or homemade)

Instructions

1️⃣ Cook the ground beef:
In a large skillet over medium-high heat, cook the ground beef until it’s no longer pink. Drain any excess fat. Add the taco seasoning mix and water as directed on the seasoning packet. Stir to combine and let it simmer for a few minutes until the sauce thickens. Remove from heat and allow to cool slightly.

2️⃣ Prepare the salad base:
In a large salad bowl, combine the chopped lettuce, cherry tomatoes, beans, corn, shredded cheddar cheese, black olives, and red onion. Toss gently to mix the ingredients evenly.

3️⃣ Add the beef and dressing:
Once the ground beef has cooled slightly, add it to the salad mixture. Pour the Catalina dressing over the top. Toss everything together until well combined and the dressing evenly coats all ingredients.

4️⃣ Incorporate the Doritos:
